Roasted Spiced Chickpeas
A healthier alternative to chips and flavoured popcorns. Chickpeas are high in fibre and are a good source of plant based protein. These can be stored in an airtight container for a few days. Try and limit it to a palmful at a time!
Ingredients
200g canned chickpeas (rinsed, drained, dried with a paper towel)
Pinch of salt, to season
1 tsp mild curry powder
3/4 tsp ground cumin
1 tsp ground paprika
Method
Preheat oven to 170 degrees.
Line a baking tray with baking paper.
In a bowl, toss chickpeas to coat with salt and spices.
Spread chickpeas evenly oven baking tray.
Roast chickpeas in oven for 45minutes to 1 hour until browned and crispy.
Cool chickpeas and enjoy as a savoury snack or add to salads for a crunchy texture!
Other flavours you could add; pepper, chilli, fresh herbs, fennel seeds, a bit of olive oil.
